christmas cranberry cake with caramel topping

hello and happy friday! a week from today, 
we'll be heading home for the holidays..
we're counting down the days! 

i have a yummy christmas dessert recipe just in time for all the christmas parties:
christmas cranberry cake with caramel topping.
if you need a delicious festive christmas dessert, this is the one!
it is so yummy, & with the caramel topping it's heavenly. 
my mom makes it every year and it's our favorite! i made it last 
night for a girls night dessert party, and now i'm sharing the recipe..enjoy!
cranberry cake
2 cups flour
2 cups sugar
2 eggs
2 tsp. soda
1 {26 ounce} can peaches 
1 tsp. salt
3 cups whole, raw cranberries

combine eggs & sugar, beat well.
add flour, soda, and salt.
put canned peaches {with juice} in blender and puree.
pour into batter. stir in cranberries by hand.
..bake at 350 for 1 hour..
caramel topping
1 cube butter
1 cup sugar
1/2 cup evaporated milk

put ingredients in a heavy saucepan and stir slowly over medium heat. allow mixture to come to a rolling boil as you stir. let it boil 1-2 minutes, thickening until desired consistency. it should appear creamy & light yellow in color. once it has thickened, you can let it cool and store in the fridge in a jar..just reheat for serving.
pour topping over cake, eat and love it!

*drizzle the topping over the cake while it's warm, so it will soak in and thicken* 
my husband wants everyone to take note that 
this dessert is very best when served warm!
