healthy chocolate muffins

muffins are good, chocolate is good, healthy is good.
healthy chocolate muffins. what's not to love?
after discovering these healthy banana muffins,
we've loved them as a healthy treat. and now we
have a chocolate alternative! mmm.

healthy chocolate muffins
60 calories per muffin! {makes one dozen}
ingredients:
-1 cup oats
-2 egg whites
-1/4 cup applesauce
-1/3 cup unsweetened cocoa powder
-1 teaspoon vanilla extract
-1/4 cup plain green yogurt {or you can use regular plain/vanilla yogurt}
-1 tbl. vinegar
-1 scant teaspoon baking powder
-1 scant teaspoon baking soda
-pinch of salt
-1/2 cup hot water
-1/2 cup sugar
-1/2 cup chocolate chips

directions:
preheat oven to 350 degrees F. spray a muffin tin with non-stick spray, or use cupcake liners. set aside.
combine ALL ingredients except chocolate chips in a blender. mix until oats are ground and batter is smooth.
stir in half of the chocolate chips (1/4 cup) and pour batter into tins.
cook muffins for 10 minutes, then pull them out and sprinkle the other half of the chocolate chips onto the top layer, then put them back in and cook for 3-4 more minutes, or until a toothpick inserted comes out clean. let muffins cool, then enjoy with a glass of milk!

  2. these are so good! I just made them last night. the only letdown is the calorie count appears to be wrong, which is why I made them in the first place, for the 60 calories. I plugged everything into the recipe section of my calorie counter app and that came up with 125 calories a muffin... still low for a chocolate muffin, but something to be aware of if you are trying to lose weight.
