maple + brown butter carrots // easter menu

truer words never were spoken..TGIF!
and especially because this friday means that easter is two days away!
this year since we live away from family, we are doing a fun 
dinner and celebrating together with friends. and the easter bunny
just might make a little stop by our place...we will see!

my cute friend and i are currently working on the easter menu, so send ideas!
we are thinking: salmon, roasted asparagus, strawberry feta salad,
homemade rolls, cranberry stuffing, maple glazed carrots,
and of course some yummy desserts! i can't wait!

the maple glazed carrots are a favorite recipe that my grandma makes, and i think they are
perfect for spring..so i'm sharing the simple recipe just in time for easter dinner!


maple + brown butter glazed carrots
  • 1 bunch carrots
  • 1 tbsp butter {or coconut oil}
  • 2 tbsp maple syrup
  • pinch of salt, to taste
    heat up a skillet on medium heat, and melt the butter//coconut oil. cook for a few minutes, stirring constantly, until it becomes browned {a nutty color/smell.} add in the carrots to the pan right away and cook for 5 minutes, tossing them in the pan to keep them from burning.
    add maple syrup to the pan, as well as the pinch of salt. the syrup will sizzle, but keep the pan moving and it will be fine. cook the carrots with the mixture for another couple of minutes until they are tender, covered, and glazed. serve!

  1. we're celebrating tomorrow (saturday) since the weather is supposed to be so great. (yay for finally having high 60's in northern utah!) hope you have a fabulous easter weekend :)

  3. Both these recipes look great! I am so excited as we have sunny weather in the coast of BC all weekend! We are doing a big Easter egg hunt in Sunday with my two year old and about 6 friends with kids of similar ages. Then a big family dinner!

  6. Do you need to shred the carrots first or just leave them as is? Looks great! I am making this with my ham for today for Easter!
