this is kind of our new favorite dessert of the moment.
it's the perfect dish to bring with friends, because it's
one of those things that everyone raves over, yet it's a
little secret how EASY it is! we are still fighting over
leftovers today, so i highly recommend making this treat.
the recipe may look crazy // too easy, but just know that
the graham cracker softens and becomes cake-like,
and the cool whip makes the pudding so soft and
airy that you feel like you are eating a cloud. it's amazing!
- • eclair cake •
- for the cake
- 2 packages dry vanilla instant pudding mix
- 3.5 cups milk
- 1 container of cool whip {12 oz.}
- 4 packages of graham crackers {or 1 box}
- for the frosting
- 6 tbsp. butter {you can sub. coconut oil}
- 6 tbsp. milk
- 6 tbsp. cocoa powder
- 1/2 cup powdered sugar
- --directions--
- combine milk + vanilla pudding packets in a bowl and beat for 2 minutes, or until thick pudding forms.
fold in cool whip to create a fluffy texture. - layer graham crackers in a 9x13 pan, shaping them to cover entire bottom of pan. {you might need to break a few into different pieces to make it all fit.}
- pour half of the pudding+cool whip mixture on top of the graham crackers and spread it out evenly.
- lay out another layer of graham crackers to cover the pudding layer. cut and shape crackers to fill it.
- spread the second half of pudding+cool whip mixture on top and cover graham cracker evenly.
- finish with the last layer of graham crackers on top. {put these ones face down, so that the top is smooth with no holes when you pour the frosting over it.} be sure the entire top level is covered with graham crackers.
- --for the frosting--
- combine butter & mil in the microwave until they are just melted together. {no need to boil}. next, add the cocoa powder + powdered sugar and blend everything together. this is more of a thin glaze than a thick frosting, so don't worry that it doesn't get too thick. once it's well combined, pour it over the top of the graham crackers and smooth it out. make sure to chill this dish overnight in the fridge and then be ready to dig in and enjoy a little slice of heaven!
