last week i saw this list on pinterest of the 10 foods you need most in your diet...
would you believe that every one of these were in our kitchen at the time?
(along with lots of treats and sweets, don't worry..we aren't that healthy! :)
...and, i had just done a costco and trader joe's run, so that's why we were stocked up.
anyway, i was excited and decided to see how many of these healthy foods i could combine into one dish. it resulted in the best recipe ever, which was surprising considering i just made it up on the spot! i have made it 3 times since then. it is PERFECT for lunch, a light dinner, or for a healthy and summery side dish. i'm a fan. hope you are too!
roasted kale & sweet potato quinoa
- 1 cup quinoa
- 2 cups chicken broth {or water}
- 1 bunch/package of kale {i get mine at trader joe's...make sure it's not baby kale!}
- 2-3 sweet potatoes
- salt & pepper
- optional additions:black beans, roasted corn, almonds
1. combine quinoa and chicken broth {or water if you don't have broth!} in a pan over the stove, and cook according to package directions. i bring it to a boil, then cover and let it simmer for 10-15 minutes.
2. bake kale using these directions.
3. peel and dice sweet potatoes into small squares. spray a baking sheet and spread them out. drizzle or spray with olive oil, sprinkle with salt and pepper, roast at 375 degrees for 30 minutes until soft. {just like how we cook it here!}
4. combine cooked quinoa, baked kale, and roasted sweet potatoes in a bowl, mixing to combine. add one can of black beans if desired.
5. enjoy a delicious, filling, and healthy meal!
