this week i was really in the mood for some fall food even though we're in warm, sunny california. i decided to make this 7 can soup, and wasn't it nice of the weather to cooperate by raining that night? so cozy. husband and i cuddled up, ate 2 bowls of this each, and watched our favorite show while listening to the rain. here is the recipe for this easy+yummy soup that helped us feel like fall...all you need is seven cans, one pot, some tortilla chips and you're set!
Ingredients:
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (15 oz.) can pinto beans, drained and rinsed
- 1 (14.5 oz.) can petite diced tomatoes, drained
- 1 (15.25 oz.) can sweet corn, drained
- 1 (12.5 oz.) can white chicken breast, drained {or, cook your own chicken & shred it}
- 1 (10.75 oz.) can cream of chicken soup
- 1 (14 oz.) can chicken broth
- 1 packet taco seasoning
- 1 (10 oz.) can green enchilada sauce {optional}
Directions:
- Mix all ingredients together in a large pot.
- Heat until warm, stirring occasionally.
- Serve with tortilla chips..{we also added sour cream & cheese as toppings!}
