quinoa.
i love it, but for a while i was scared to make it. i assumed it would be tricky.
news flash: it's not! i bought the big bag of it at costco so that i would be forced
to start using it! so far we've made some good recipes with it that i'll have to
post. for now, here is one i made this week for a healthy themed girls night..
i made it up, but since it turned out well i will post it here!
black bean & feta quinoa
ingredients:
1 cup uncooked quinoa
1.5 cups water
2 cups chicken broth
1 can black beans
1 cup spinach
2 tomatoes, diced
1/2 cup feta cheese
optional: corn, mushrooms
directions:
rinse the quinoa under water & drain it.
pour quinoa + 1.5 cups water into pan, bring to a boil. let it boil until the water
is absorbed and then quinoa is lightly toasted. {4-5 minutes}
pour in chicken broth...return to a boil for 1 minute, then simmer on low until broth is absorbed {about 15 minutes..be patient!} stir quinoa while it absorbs the broth.
pour black beans, spinach, tomates, feta, and any other additions into a bowl and mix. when quinoa is finished and cooled, pour into bowl and mix everything.
can serve warm or chilled!

Looks delicious! We also bought that huge costco bag :) I actually made a quinoa & cheese (like mac & cheese) which is also delicious!

DeleteSo I tried quinoa once and wasn't a fan but this recipe looks good enough to make me want to try it again. Seriously black beans, tomatoes AND feta? This sounds like a match made in taste bud heaven. Thanks for posting it!
