mini molten chocolate soufflés


this is my very favorite dessert...
and i LOVE desserts,
so that is saying a lot.
since my favorite holiday is
tomorrow, i thought i'd share this
 just in time to make it for your valentine!

this recipe makes 4 individual soufflés, and you will need 
little oven-safe soufflé dishes to bake them in!

ingredients
4 squares baker's semi-sweet baking chocolate
1/2 cup butter
2 eggs
2 egg yolks
6 tbsp flour
1 cup powdered sugar
1/2 cup vanilla bean ice cream

directions
preheat oven to 425 degrees.

grease four custard or souffle dishes (3/4 cup size) and place on baking sheet.

microwave chocolate and butter in large microwavable bowl in HIGH for 1 minute or until butter is melted. stir with wire whisk until remaining chocolate is completely melted. stir in powdered sugar until well blended. whisk in eggs and egg yolks. stir in the flour. 

divide batter between prepared cups. bake for 13-15 minutes until sides are firm but centers are soft. remove from oven and let stand 1 minute. invert cakes onto dessert plates, then top with sprinkled powdered sugar and ice cream on the side. SERVE IMMEDIATELY. {but if you have extras they are kinda also really good the next day in the fridge} 

enjoy!!

note: batter can be made ahead of time. divide into prepared dishes, cover with plastic wrap, and refrigerate. it can be made as much as a day ahead. bake when ready to eat if within 15 minutes.
