pumpkin zucchini bread + apartment additions

question: what do you do when you are craving pumpkin bread, but you also have lots of zucchini to use up?
answer: make pumpkin-zucchini bread. brilliant!
this turned out to be a surprise discovery and is one of our new favorites around here. i should have thought of it before--i love pumpkin bread and i love zucchini bread,
so i should have known i would double love the combo!
don't these colors make you think of fall? i loved how they looked together and didn't want to mix it up because it looked so yummy and pumpkin-y just like that.
the zucchini addition may seem a little different but it really is the best all together!
as you can see, i literally couldn't wait to cut into it before i took a picture of it!
it just smelled too good...
this is seriously some delicious bread. 
here is the recipe for two loaves..i halved it and made one!

Pumpkin Zucchini Bread

Ingredients
  • 3 eggs, lightly beaten
  • 2 cups sugar
  • 1 cup canned pumpkin
  • 1 cup butter, melted {i used a little less}
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 cup shredded zucchini
Directions

  • In a bowl, combine eggs and sugar. Add pumpkin, butter and vanilla. Combine dry ingredients; gradually add to pumpkin mixture and mix well. Stir in zucchini and nuts. Pour into two greased and floured 9-in. x 5-in. loaf pans. Bake at 350° for 45-50 minutes or until breads test done. Cool in pans 10 minutes. Remove to a wire rack. Yield: 2 loaves.

aside from that deliciousness, we got a few more things set up in our apartment and it feels more and more like home all the time! 
 here are a few of our cute dishes: we have the pottery barn emma dishes in white,
and two different sets of martha stewart dishes {the tan stripe & tan damask}.
i love how they all go together! they are the perfect dishes for me.
 we got this cute little stand from my room which fits nicely here by the entry
 ..and husband made this version of the proclamation to the world which i love.
 this was signed at our wedding and we love how perfectly all the signatures
turned out! we had it matted really big so it looks cute on our wall and
reminds us of the best day and all those we shared it with!
 my closet is getting {a little} more organized..but i did just get some jackets and "fall clothes" from home so we'll see how long until it gets too full!
 and last but not least, this is one of my favorite chairs & pillows...so like zucchini & pumpkin, they are even better together! don't you think?

  1. that bread looks amazing! i've only baked with zucchini once and i loved it, so i'm sure i would love this recipe! those dishes are adorable, and i'm in love with that chair & pillow! it looks so comfy!

  4. Adorable decorations! So happy you found me and my little blog. I agree that we were meant to be friends! I want that Proclamation design that your husband did! Do you have an etsy shop or a way I can purchase that?! My husband had to memorize the 7th paragraph before he married me so it's super special to us and I haven't found one I like yet!

  9. Where did you buy the Martha Stewart dishes? Something like that would go great in my kitchen. I have some see-through glass cupboards that would love to case more elegant and matching dishes (I'm sure you remember our hodge podge of cups and plates and bowls :))

  12. I made this last night and substituted flour for gluten free flour (I am gluten intolerant) and it turned out very yummy! It was probably a little more crumbly than yours because of the gf flour but otherwise it was very tasty! I also added about a cup of chocolate chips =)
