pumpkin CAKE

are you tired of hearing about pumpkin yet?
i'm not. i'm obsessed. along with 99% of the population during the fall.
since i already make our pumpkin chocolate chip cookies all the time, i mixed it up this week with yummy pumpkin cake when we had our best friends over for dinner. it's a moist, delicious cake and we cleaned out the entire pan. 
so there you have it.
pumpkin cake
1 cup sugar
2 eggs
1 cup canned pumpkin
1/2 cup vegetable oil
1 cup and 2 Tbsp flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt

beat sugar + eggs with hand mixer until combined.  then, beat in pumpkin and oil.  at a low speed add the flour, cinnamon, baking soda, baking powder and salt. beat all of that together for 1 minute. pour this into a sprayed 8x8 square pan. bake at 350 degrees for 25-30 minutes.

if  you so desire, frost with cream cheese frosting. i use my basic cream cheese frosting and combine: cream cheese, vanilla extract, milk + powdered sugar. this cake is good with or without frosting!
