with making so much pumpkin lately, i had some extra in the fridge.
i decided to try throwing it into some waffles, and the results were
fluffy, thick waffles with a hint of pumpkin to make them festive.

pumpkin waffles
ingredients
2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
1 1/2 cups milk
4 tablespoons melted butter
1/2 cup canned pumpkin
directions
combine dry ingredients. in another bowl, combine wet ingredients. pour over the top of dry ingredients and mix until just combined. pour into sprayed + heated waffle iron, and cook for 4 minutes or until beeper goes off. sprinkle with powdered sugar + pure maple syrup.
