baked toffee chocolate doughnuts

i really hope you took my last advice and got a doughnut pan.
if you didn't, trust me --- you'll want one for these.
we made them when some friends were coming over, and we
accidentally ate most of them before our friends even got there.
i'm not even ashamed! they are that good. plus, with the greek
yogurt + coconut oil going on, they aren't too bad for us.
they have that chewy texture of a good cake doughnut,
with the best toffee streusel on top. mmm mmm, good.
toffee chocolate doughnuts
ingredients:
  • 1 cup flour
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 6 tablespoons greek yogurt
  • 1/4 cup milk
  • 1/4 cup coconut oil
for the toffee topping:
  • 1/4 cup flour
  • 1/4 cup packed brown sugar, packed
  • 3 tablespoons butter
  • 1/4 cup toffee bits

directions
first, preheat oven to 375 degrees. then combine the dry ingredients {flour, sugar, cocoa powder, baking soda, and salt} in a mixing bowl. in a separate bowl, beat together the wet ingredients {vanilla, egg, greek yogurt, milk, and oil}.
pour the wet ingredients into the dry ingredients and stir until combined. don't overmix.
spoon the doughnut batter into a well-greased doughnut pan.
for the toffee topping, cut together the flour, sugar, and butter until you have small gatherings of butter {think streusel}. gently stir in the toffee bits, and then sprinkle this topping over the doughnut tops. be generous!!
bake for 8 minutes, or until the tops of the doughnuts spring back when touched.
let them cool before eating. enjoy!!
