last week when we were deciding what to have for dinner and i said i was craving stir fry, husband said yes...but asked could i try it with noodles instead of rice?
umm, good call husband. maybe you should be the chef. i used our favorite brown noodles from costco, then made the stir fry veggies, chicken, sauce, and added noodles in.
i am not exaggerating when i say that chase went back for FOURTHS. it is so good!
here is the simple recipe i use...you can make it with noodles or rice!
noodle stir fry
ingredients
1 pound boneless skinless chicken breast, cut into small pieces
2 garlic cloves {finely chopped}
2-3 cups vegetables {broccoli, carrots, water chestnuts, anything}
1 package noodles {or 2 cups rice}
--for the sauce--
3 tablespoons soy sauce
1 minced garlic clove
2 teaspoons cornstarch
3 tablespoons water
directions
1. spray a 12-inch nonstick skillet pan. heat over medium-high heat. add chopped chicken and garlic to taste. turn chicken and cook for 3-4 minutes, until it is brown. {alternatively, i cook chicken in large amounts at a time and then cut and freeze, so when i make this i just thaw & heat it on the skillet with garlic.}
2. add vegetables {i use whatever i have fresh on hand, or i use my frozen costco bag of veggies}
3. mix up stir fry sauce in a separate pan by dissolving cornstarch in water, then combining all ingredients and pouring over simmering chicken and veggies. stir until sauce is thickened.
4. add noodles {or rice if you prefer} and stir until well combined.

i love a good noodle stir-fry it is a great way to get plenty of veggies in your dinner and use up any leftover meat you might have

ReplyDeletehi! i just use whole wheat spaghetti noodles, but you can use asian noodles, plain spaghetti, or whatever you want! yes-- cook them first, (al dente) then add! xoxo
