noodle stir fry

last week when we were deciding what to have for dinner and i said i was craving stir fry, husband said yes...but asked could i try it with noodles instead of rice? 
umm, good call husband. maybe you should be the chef. i used our favorite brown noodles from costco, then made the stir fry veggies, chicken, sauce, and added noodles in. 
i am not exaggerating when i say that chase went back for FOURTHS. it is so good! 
here is the simple recipe i can make it with noodles or rice!

noodle stir fry

1 pound boneless skinless chicken breast, cut into small pieces
2 garlic cloves {finely chopped}
2-3 cups vegetables {broccoli, carrots, water chestnuts, anything}
1 package noodles {or 2 cups rice}

--for the sauce--
3 tablespoons soy sauce
1 minced garlic clove
2 teaspoons cornstarch
3 tablespoons water

1. spray a 12-inch nonstick skillet pan. heat over medium-high heat. add chopped chicken and garlic to taste. turn chicken and cook for 3-4 minutes, until it is brown. {alternatively, i cook chicken in large amounts at a time and then cut and freeze, so when i make this i just thaw & heat it on the skillet with garlic.}
2. add vegetables {i use whatever i have fresh on hand, or i use my frozen costco bag of veggies}
3. mix up stir fry sauce in a separate pan by dissolving cornstarch in water, then combining all ingredients and pouring over simmering chicken and veggies. stir until sauce is thickened.
4. add noodles {or rice if you prefer} and stir until well combined.

  8. i love a good noodle stir-fry it is a great way to get plenty of veggies in your dinner and use up any leftover meat you might have

  9. hi. what kind of noodles do you use? do you cook them first (like spaghetti) or add them uncooked?

    1. hi! i just use whole wheat spaghetti noodles, but you can use asian noodles, plain spaghetti, or whatever you want! yes-- cook them first, (al dente) then add! xoxo
