what we eat

here are some yummy foods that have made their way into our kitchen lately..
since it's spring// almost summer, we've been having lots of fresh + yummy 
food with the warm weather. hopefully you will get some cooking 
inspiration from this post...or at least work up your appetite! :)
whole wheat noodles with tomato cream sauce..husband and i both prefer
white pasta sauces to tomato, so i lighten up the tomato sauce with a creamy version.
paired with kale spinach salad, strawberries, cranberries, feta and trader joe's 
champagne pear vinaigrette! {a whole post of trader joe's favorites coming soon}

coconut chocolate chip cookies..pretty much a constant in our kitchen!

another favorite meal...honey soy salmon with brown rice & lemon, 
+ salad, roasted sweet potatoes, and fruit. mmmm!

we have recently discovered making stir fry at home...WIN.

another common sight in our kitchen, chicken quesadillas, or any mexican food really!

husband picked this up the other day...i'm not mad about it

daily green smoothie. lately we've been adding oatmeal, so good!

this is one of my favorite salad combos. spinach-strawberries-pears-apples-cranberries.

i threw together this delicious southwestern salad mix
including corn, black beans, tomatoes, spinach, avocado and chicken.
we had it plain one night, and wrapped up in burritos the next night!

this was a few weeks ago, but found it on my phone and had to include it..
because who doesn't want to see a picture of a beautiful pizzokie? we had this
with friends and yes it was as good as it looks. gone in 60 seconds!

one of our favorite things is dinners our close friends out here..
we switch off all the time, each make part of the meal, and trade
off apartments each time! always great food + conversation.


lastly, this is how i make our morning oatmeal..i put it in glass tupperware
at night and pour milk in, and by the morning it has soaked up the milk
and it is thick, delicious, filling breakfast! i live off this stuff!

and some proof that we are being healthy..
salads to take to work! i have been making
turkey paninis or else leftovers for so long for 
our lunches, i need new ideas! what do you pack for lunch?

  1. Homemade stir fry is delish! Also, that pizookies looks AMAZING. Unfortunately I live alone so baking stuff like that always ends up in me eating everything haha.

  3. I love that you have a great group of friends. I normally take leftovers or the makings of a sandwich and make it at work. I don't like it when it gets soggy.

  5. You're making my mouth water! I think i'd love all of these. I do a daily green smoothie as well. If oatmeal wasn't so expensive in Korea i'd be adding it to my smoothies too! Unfortunately a tub of it is $15 dollers. Yuck.
