whole wheat banana bread

there is no better combination than a rainy thursday in my book.

i've said it before, i'll say it again. best type of weather + best day of the week.
today is perfect. the smell of rain is so strong, and i am wearing my new pink hunter rain boots. i even woke up hearing the rain against the window. the only thing that would make it better is some whole wheat banana bread, don't you think? here's our recipe.. enjoy!

whole wheat banana bread

ingredients

• 1/3 cup vegetable oil {can sub coconut oil}
• 1/2 cup honey
• 1 tsp vanilla
• 2 eggs
• 1 cup bananas, mashed {2-3 bananas}
• 1 3/4 cup whole wheat flour
• 1/2 tsp salt
• 1 tsp baking soda
• 1/4 cup hot water

directions

preheat oven to 325 degrees F

in a mixing bowl, beat oil and honey together. add eggs & mix well. stir in bananas and vanilla. stir in flour and salt. add baking soda to hot water, stir to mix, and then add to batter. spread batter into a greased 9x5 inch loaf pan.

bake for 55 to 60 minutes. *make sure it is cooked in the middle! 

cool on wire rack for 1/2 hour before slicing. always serve with butter :)

makes 1 large loaf, or 2 medium loaves.
