what do you do when there's no cafe rio where you live??
...make it yourself! after visiting home last week and having lots
of cafe rio, we were in need of some this week. it turned out amazing!

you won't believe how easy this is and how much it tastes like the real thing...
the ingredients are surprising, but apparently cafe rio uses them too! also, it's made
in a crock pot so it couldn't be easier...so nice to come home to it all ready!
the recipe is below:
cafe rio sweet pork1 cup salsa
1 cup brown sugar
1 cup sprite or coke (not diet)
3 pounds pork tenderloins, pork loin or other pork roast
---Stir together salsa, brown sugar, and soda. Pour over pork in a crockpot.
Cook on low for 8 hours. Shred meat for serving.

cilantro lime rice
3 cups cooked white rice (1.5 cups uncooked)
1 cup loosely packed cilantro
1/2 cup chopped white onion
1/4 cup chopped green onion
1.5 tablespoons lime juice
3/4 teaspoon salt
1 teaspoon olive oil
1 teaspoon olive oil
---Pulse cilantro, onions, lime juice, salt & oil in blender, scraping down sides as needed until combined. Fold mixture into warm rice.
we paired this with pinto beans, avocados, and corn tortillas
...and, we found this amazing horchata to top it off!
husband couldn't be happier with this meal.
you'll have leftovers, so save them for pork quesadillas the next day!
we ended our yummy meal with diet coke brownies..
what?! who knew you could take a box of brownie mix,
pour a can of diet coke in, bake it, and you'll get brownies with
no eggs/oil? we had a random diet coke can from our flight
this weekend and since i don't like drinking it, i thought why
not try this crazy idea i'd heard about? it works! good to know
for those days when you don't have all the ingredients!

ReplyDeleteWe have Cafe Rio in Arizona and I've had it in Utah. I also like Costa Vida which I hear is now in Utah, did you ever try that before you moved? If so, how did you like it. Thanks for the recipes, I have been wanting to make this. I made a Diet Coke sheet cake...so good. It's on my dessert board on Pinterest if you want to try that...if you like Texas sheet cake you'll love it. I have substituted applesauce for oil and plain yogurt for sour cream. Worked good. The last thing I cooked this week was for our taco salads. Thanks for the comment. :)
ReplyDeleteyes i love both! i think cafe rio just has the better tortilla but costa vida is great too. i will look up your pinterest recipe because that sounds amazing..we LOVE texas sheet cake! i have done yogurt instead of sour cream, but i need to try the applesauce for oil-- did that one turn out?

ReplyDeleteyum those sound so good! chipotle & cafe rio are semi-similar, but rio is probably a little more unique...you have to try it sometime!

My bro's fam LOVE cafe rio. I enjoy it, but I'll admit like asian & italian better than mexican (not a big cilantro fan). Made a yummy salmon steak w/ almond shreddings on top & smothered it in olive oil. (I love cooking w/ olive oil). Only added salt! Simple & easy, tastes great. Would probably be tastier w/ some kind of tarter sauce on the side & a dash of lemon, but enjoyed it nevertheless. Unless I'm preparing food for others, I'm a very simple eater, but I do like to cook. Your Mom looks like an amazing baker! The peach pie looked delectable!! Have a Wonderful Weekend . . .
