p a d t h a i

if you haven't noticed, we are huge fans
of pad thai. we are constantly on the
search for our favorite pad thai, and
we have a few frontrunners...but now
that we've moved right downtown SF we
are surrounded by thai places 
everywhere...literally on every corner.
so the search must continue. until we
crown a winner, we also make this
easy version at home sometimes. i have 
tried a lot of different pad thai recipes,
spent a lot on weird sauces and ingredients,
and never made a good one...until now.
i combined some different recipes i've
tried and came up with this simple one...
it is really simple compared to other
pad thai recipes you see, but so good.
we are fans. try it out next time you 
don't want to order takeout!
-- ingredients --
8 ounces dried, wide and flat rice noodles
2 tablespoons brown sugar
2 tablespoons fresh lime juice
3 tablespoons soy sauce
2 teaspoons vegetable oil
3 scallions {green onions}, white and green parts, sliced + separated 
1 minced garlic clove
2 eggs, lightly beaten
1/4 cup peanuts
^^ this is the brand of noodles we get,
you only use half of the bag each time!

-- instructions --
1. soak noodles according to the package instructions...make sure you really soak them in hot hot water, because you don't want them to be too firm. rice noodles are a little tricky to figure out, so just go by the package but err on the side of soaking them more than less. they will feel a little bit leathery when you drain them, but don't worry--you cook them more later!

2. combine brown sugar, lime juice and soy sauce (plus a squirt of sriracha if you want..) and whisk together in a small bowl.

3. heat vegetable oil in a large skillet over medium-high heat. once it's warm, add scallion whites + garlic and simmer, stirring, until cooked  & fragrant. this should take about 30 seconds to a minute. then add the eggs and cook, using spatula to scrape the skillet and cook eggs until they are almost cooked and set (about another minute). put the eggs on a separate plate.

4. add in noodles, green part of scallions, and sauce to the skillet. toss the noodles in the sauce while cooking, until noodles are soft. add eggs and combine everything, breaking up eggs throughout noddles.

5. serve with lime wedges and chopped peanuts, with cilantro if desired.
