what we eat

 we've been busy little bees lately...
{the kind of busy where we're both working full-time, doing grad school at
night, coaching the tennis team, having lots of visitors, and balancing everything.}
so some nights cooking something fancy in between all of that isn't likely.
but, cooking really does relax me so much..i love it! so i still try to make time to try fun new recipes and cook amidst the chaos! here are a few of our favorites that i've made over the past two weeks..with recipes included, so hopefully you can find something yummy to make!
Pesto Chicken Sandwiches
we love making paninis and usually just use all different ingredients, but
this time i saw a good recipe from williams-sonoma so we tried it.
just get chicken breasts, olive oil, cheese {fontina or swiss} some good
bread {we used sourdough this time}, tomato, and pesto.
yum!
press it in the panini grill, and there you go!

Green Smoothies
how have i never made these until now? after hearing about them forever, our friends finally convinced us to make our own...so easy! we have made one every morning this week, and i always leave for work feeling so good filled with so many healthy things! the nice part about these is you can make them different depending on what you have/like, but basically here is what we put in ours:
  • fruit (strawberries, blueberries, pineapple, mango...whatever you have)
  • a handful of greens (spinach, kale, etc)...we buy a lot and then freeze it so it lasts and it makes the drink better
  • 1 banana
  • purified water
  • any other veggies (sometimes cucumbers, carrots, etc) you can also put a lemon with the rind or other antioxidants
  • oatmeal
    *then blend, drink, and feel great! you'll want to start making them every day! also...we love our blendtec blenders so much!
    GET ONE! it blends anything flawlessly.


    Baked Zucchini Fries
    this week at the farmer's market i picked up a giant zucchini with the intent of making some good zucchini bread! but then husband decided to tell me he was going off sugar for the week....so i had to find some other zucchini recipes! this one turned out pretty good and makes a good appetizer/ side dish. we took it to dinner with our favorite new friends dustin & kendall and they even approved!

    Slice zucchini into 3-inch-by-1/2-inch sticks. Dip into beaten egg (or egg substitute), then into seasoned breadcrumbs. Place on a baking sheet, spritz with cooking spray and bake at 425 degrees for 30 minutes, turning zucchini fries after 15 minutes.
Peach Waffles
one good idea i had this week was to make waffles one morning, use up all the batter and eat what we could, then freeze the leftovers to toast on other mornings for a quick breakfast! husband approves.

 one other nice thing this week was that i made our lunches ahead of time...
so these yummy wraps were wrapped in the fridge and ready to go in the morning!
{honey mustard, roasted turkey, swiss, spinach and avocado in a wrap}

  1. All these recipes look divine! Especially the panini! Yummy! You are so busy but I am impressed you stay so organized! And jealous you get to visit Utah in a couple weeks!

  2. Loving those baked zucchini fries! I'm putting those on the menu for next week. I sure hope Dan is ok with that. ;) Oh and we do pasta/pesto all the time ... we made our own pesto last year. Must do that again. Pesto is expensive! Blah.

    I love banana bread! I add chocolate chips or walnuts to mine when I make it :)
